  • 1 Medium Green Papaya Peeled and Julienned
  • 2 Medium Carrots Peeled and Julienned
  • 1 Cup Cheery or Roma Tomatoes Halved or Chopped
  • 1 Cup Green Beans or Long Beans Cut into 2" pieces.
  • 1/4 Cup Roasted Peanuts Optional Garnish
  • 1/4 Cup Fresh Cilantro Rough Chop for Garnish
  • 1/4 Cup Thai Basil Rough Chop for Garnish


  • 3 Cloves Garlic Minced
  • 2 Thai Chilies Adjust to your taste.
  • 3 Tbsp Tamari or Soy Sauce
  • 3 Tbsp Fresh Lime Juice
  • 1 Tbsp Date or Maple Syrup Can also use Palm Sugar
  • 2 Tbsp Rice Vinegar
  • 1 Tbsp Toasted Sesame Oil Optional
  • 1 Tbsp Vegan Fish Sauce or More Tamari


  •  In a large mixing bowl, combine the julienned green papaya, carrots, cherry tomatoes, and long beans. Toss them together to evenly distribute the ingredients.
