Main Ingredients
- 1 Medium Green Papaya Peeled and Julienned
- 2 Medium Carrots Peeled and Julienned
- 1 Cup Cheery or Roma Tomatoes Halved or Chopped
- 1 Cup Green Beans or Long Beans Cut into 2" pieces.
- 1/4 Cup Roasted Peanuts Optional Garnish
- 1/4 Cup Fresh Cilantro Rough Chop for Garnish
- 1/4 Cup Thai Basil Rough Chop for Garnish
Dressing
- 3 Cloves Garlic Minced
- 2 Thai Chilies Adjust to your taste.
- 3 Tbsp Tamari or Soy Sauce
- 3 Tbsp Fresh Lime Juice
- 1 Tbsp Date or Maple Syrup Can also use Palm Sugar
- 2 Tbsp Rice Vinegar
- 1 Tbsp Toasted Sesame Oil Optional
- 1 Tbsp Vegan Fish Sauce or More Tamari
Instructions
- In a large mixing bowl, combine the julienned green papaya, carrots, cherry tomatoes, and long beans. Toss them together to evenly distribute the ingredients.
- In a separate small bowl, whisk together the minced garlic, Thai chilies, soy sauce, lime juice, maple syrup, rice vinegar, toasted sesame oil, and vegan fish sauce (if using). This dressing will bring together the bold flavors of the salad.
- Pour the dressing over the green papaya mixture and toss well to coat the vegetables with the dressing. Allow the salad to sit for 10-15minutes to let the flavors meld together.
- Once ready to serve, garnish the green papaya salad with crushed roasted peanuts and fresh cilantro leaves for added texture and freshness.
