A simple recipe for those who prefer having a dairy-free alternative to traditional ice cream. There are many variations to this recipe, this is just a guide so you can start exploring new homemade creations.  This wonderful “Nice Cream” recipe has become popular worldwide showing up in many mainstream ice cream blogs.

“Banana Nice Cream”

Ingredients:

  • 3 ripe large bananas or 6 apple bananas, peeled and sliced
  • 3 tablespoons of soy or almond milk (add more as desired)
  • 2 tablespoons almond butter (optional)
  • 1 teaspoon vanilla extract, powder or scraped vanilla beans
  • 1 tablespoons maple or date syrup (optional) Check sweetness of the fruit first
  • Toppings of your choice (chopped nuts, berries, dark non-dairy chocolate)

Instructions:

  1. Place the sliced bananas in a single layer on a baking sheet lined with parchment paper. Freeze for at least 2 hours or until solid.
  2. Once frozen, transfer the bananas to a blender or food processor. Add your plant milk, almond butter, vanilla extract, and maple or date syrup (if desired).
  3. Blend the mixture until smooth and creamy, scraping down the sides as needed. If the consistency is too thick, you can add more of plant milk to help with blending.
  4. Transfer the nice cream to a container and freeze for an additional 1-2 hours to firm up.
  5. Serve the banana nice cream in bowls or cones, and garnish with your favorite toppings.
